About foods with low glycemic index and their impact on blood sugars

Glycemic index (GI) is a ranking system that measures how quickly carbohydrate-containing foods raise blood sugar levels after being consumed. Foods with a high GI cause a rapid increase in blood sugar, while foods with a low GI are digested and absorbed more slowly, leading to a gradual rise in blood sugar. 

Maple syrup is considered a low GI food with a glycemic index of 55
